Apricot-Infused Madeleine
Preparation
- Create a ribbon with the egg and sugar using a mixer until a white foam is obtained.
- Mix the flour and baking powder.
- Heat the milk and apricot syrup.
- Combine the ribbon, flour-baking powder mixture and the milk-apricot syrup along with the dried apricots cut into small pieces.
- Fill small Madeleine molds and bake at 180 degrees in a convection oven for 6 to 7 minutes.

- 80 g butter
- 1 egg
- 50 g sugar
- 80 g flour
- 6 g baking powder
- 2.5 tbsp milk
- 12 g Martine Meurens “SIROP DE LIÈGE” (apricot)
- 4 dried apricots
