Apricot-Infused Madeleine

Preparation

  1. Create a ribbon with the egg and sugar using a mixer until a white foam is obtained.
  2. Mix the flour and baking powder.
  3. Heat the milk and apricot syrup.
  4. Combine the ribbon, flour-baking powder mixture and the milk-apricot syrup along with the dried apricots cut into small pieces.
  5. Fill small Madeleine molds and bake at 180 degrees in a convection oven for 6 to 7 minutes.

  • 80 g butter
  • 1 egg
  • 50 g sugar
  • 80 g flour
  • 6 g baking powder
  • 2.5 tbsp milk
  • 12 g Martine Meurens “SIROP DE LIÈGE” (apricot)
  • 4 dried apricots
